A dining chair is built for forty minutes, an office chair for eight hours. The difference is not softness but the fact that the chair adjusts to the person rather than the other way round.
What should adjust

Mesh or fabric
In the Israeli climate this is not a matter of taste. A mesh back lets air through and your back stays dry by the end of the day; a padded fabric back feels nicer and warmer, but in a room without air conditioning the difference shows quickly in summer. The seat itself is almost always padded either way, because mesh sags under body weight.
About height adjustment. The right height is set by the desk, not by the person. First raise the chair until your forearms rest easily on the desktop, and only then look at your feet. If they are dangling, what you need is a footrest, not a lower chair: a chair set too low will have you raising your shoulders all day.
